Ingredients:

  • 1 cup carrots, shredded
  • 3 apples, diced
  • 1 tablespoon lemon juice
  • 1/2 cup raisins
  • 1/2 cup low-fat mayonnaise
  • lettuce (optional)

Directions:

  1. In a large bowl, combine all ingredients.
  2. Chill thoroughly.
  3. Serve on lettuce, if desired.
